Caffeine

Step 1 of up to 4

Caffeine is just xanthine with three methyl groups bolted onto its three nitrogens. The order matters: under base + MeI, the imidazole nitrogen (N7) reacts first because its NH is the most acidic, then N3, and N1 last. Walk it backward: peel off one methyl at a time, in the reverse of that order, and you should land on plain xanthine.
